  • 4 chicken drumsticks
  • 1/2 onions, chopped
  • 1 small bunch of parsley
  • 1 teaspoon salt
  • 6 saffron bristles
  • 1 cinnamon stick
  • 1 teaspoon ginger
  • 1/2 teaspoon black pepper
  • 8 cl Oil
  • 15 cl water
  • 350 g small white onion

For tomato jam:

  • 1.250 kg tomatoes
  • 8 cl Oil
  • 1 teaspoon salt
  • 4 tablespoons coarse sugar
  • 2 cinnamon sticks
  • 2 cinnamon powder capsules
  • 1 tablespoon roasted sesame

  1. In a saucepan over low heat, fry the chicken drumsticks with chopped onions in oil for 5 minutes.
  2. Add water, spices, parsley, and small onions.
  3. When boiling reduce the fire and leave the cooker over the fire until the chicken is cooked and broth broth.
  4. Peel the tomatoes, remove the seeds and cut small pieces.
  5. In a saucepan over low heat, cook tomatoes in oil for 10 minutes with a fork.
  6. Add salt, cinnamon and sugar.
  7. Continue cooking while stirring for a thick and soft tomato jam.
  8. Place the chicken thighs in a serving dish, garnish with small onions and water with broth.
  9. Garnish with slices of tomato jam sprinkled with sesame.
  10. Serve hot.
