Ingredients

For Fried Chicken:

  • 8 chicken legs
  • ½ minced onion
  • 1 minced garlic clove
  • 4 tablespoons oil
  • 1 teaspoon ginger
  • 8 saffron bristles
  • ½ teaspoon turmeric
  • 1 cinnamon stick
  • salt
  • A small bouquet consisting of: 4 sticks of coriander and 4 sticks of parsley
  • 200 g small onion
  • 50 cl water

Eggplant jam:

  • 8 eggplant seeds
  • 2 chopped onions
  • 1 cinnamon stick
  • 10 cl Oil
  • salt
  • 3 tablespoons orange honey
  • ¼ teaspoon cinnamon
  • 150 g crushed almonds

Preparation

  1. In a cooker on low heat brown onions with garlic and take the chicken in oil for 5 minutes.
  2. Add to them small onions, water, spices and herbal bouquets. Cover the pot and simmer until the chicken thighs are cooked and broth.
